The Restaurant

Nestled within the beautiful West Sussex countryside, this award-winning restaurant with luxury rooms has built an outstanding reputation for modern British cuisine, exceptional service, and a genuine passion for provenance.

The kitchen works exclusively with the finest seasonal ingredients, creating elegant tasting menus and refined à la carte dishes that celebrate the very best of British produce. Every plate is thoughtfully crafted with precision, creativity, and attention to detail.

With a close-knit brigade of just five chefs, you'll work side-by-side with an experienced Michelin-starred Chef, receiving hands-on mentoring while playing an integral role in the day-to-day running of the kitchen.

It's also a hugely exciting time to join the business. Approved expansion plans are already in place for a significant extension, which will include a second restaurant and an additional 10 luxury guest rooms. The Role

As Sous Chef, you'll be the Head Chef's right hand, helping lead the brigade while maintaining the exceptional standards the restaurant has become known for.

You'll play a key role in delivering outstanding service, mentoring junior chefs, driving consistency, and contributing creatively to the development of new seasonal menus.

Key Responsibilities

  • Supporting the Head Chef with the day-to-day running of the kitchen.
  • Leading service in the Head Chef's absence.
  • Maintaining exceptional food quality, presentation, and consistency.
  • Training, developing, and motivating the junior brigade.
  • Assisting with menu development using the very best seasonal produce.
  • Managing stock, ordering, and food cost controls.
  • Ensuring impeccable food safety, hygiene, and kitchen standards.
  • Helping drive standards as the business continues its exciting expansion.

About You

  • Currently working as a Sous Chef or a strong Junior Sous Chef ready for the next step.
  • Experience within Michelin, 3 Rosette, or premium fresh-food restaurants.
  • Passionate about modern British cuisine and seasonal ingredients.
  • Calm, organised, and composed during busy services.
  • A natural leader who enjoys developing others.
  • Ambitious, driven, and eager to progress within a growing business.
