Search are currently working with an innovative and progressive beverage manufacturing business. My client has a fantastic opportunity for a Senior Brewer with a great knowledge of Brewing Science. The position calls for a candidate who has a proactive and innovative approach to Brewing.

You will be supporting the Brewing Manager in managing the brewing and cellaring team to ensure the production of wort, its fermentation and conditioning in line with quality control and production targets. Optimising brewing and cellaring procedures.

This position is ideally suited to a candidate who can showcase a deep understanding of brewing science, high-quality beer production as well as in-depth knowledge of brewing equipment and process. The ideal candidate will have knowledge of mechanical and electrical engineering and be familiar with laboratory equipment and methods.

Duties and Responsibilities:

* Support the Brewing Manager in ensuring the brewing and cellaring team can perform all their daily duties.
* Support Brewing Manager in managing the team by supervising and training Production and Junior Brewers
* Perform all shift leading tasks and being responsible for an assigned production area (Brew-house, cellar or filtration) of a fully automated Brewery.
* Being responsible for projects relating to optimising Brew-house/cellar processes, efficiency and automation.
Support Brewing Manager in procedural development and optimisation;
* Keeping systems and records up to date (including but not limited to BOTEC, SAP and full Microsoft Office package excel/SharePoint/teams/powerapps).
* Assisting Brewing Manager and Production Planning Manager in raw material management.
* Ensuring SOP's are up to date and being followed by all employees;
* Verifying that beer fermentation and conditioning proceeds as expected;
* Verifying that beers are in spec for packaging and assist the Brewing Manager in ensuring all beer hits target specs.
* Ensuring cleaning is performed to schedule;
* Capable of troubleshooting problems.
* Carrying out hygiene work, ensuring the brewery is kept clean.
* Providing cover as a team 24 hours per day, 7 days a week including bank holidays (e.g. Christmas); Brewing Ops (Brew-house).
* Keyholder. Often the most senior person on site.
* Knowledge of all relevant Brewing-Packaging-Quality-Ops KPIs and implementation of tasks to ensure teams are aware and on a right track to facilitate them.
* Reporting on Brewing KPIs to Brewing Manager, precise and on time.
* Organising and attending all relevant meetings, WPM, Daily Brewing, MBM, Planning Meetings etc.
* Good Time Management.
* Ensuring accurate records are kept and written procedures are followed.
* Ensuring all products and processes meet relevant Food Hygiene standards.
* Ensuring raw materials and supplies are made ready and available to facilitate work.
* Ensuring that the quality of product leaving Brewery is excellent at all times.
* Increasing your understanding of the art and science of brewing through study.
* investigation. All Brewers should be working towards their IBD certificate or equivalent.
* When needed, carrying out daily Brew-house duties, including;
o Operate on a fully automated 150hl Brew-house
o Responsible for all aspects of wort production
o Malt preparation
o Brew-house CIPs
o Keeping systems and records up to date (including but not limited to BOTEC, SAP and full Microsoft Office package excel/sharepoint/teams/powerapps).
o Assisting other brewers during shift overlaps.
o Ensuring brewing teams are carrying out their tasks.
o Performing basic quality checks. Phys-Chem checks, yeast counts & yeast viability.
o Ensuring correct use, storage and stock level management of relevant raw materials (malt, hops, salts etc).
* When needed, carrying out daily Cellaring duties, including;
o Operate in a fully automated cellar
o Measuring in-tank CO2/DO
o Ensuring beer is in spec for packaging dates.
o Yeasting /hopping off vessels as required.
o Yeast management.
o Carrying out Vessel cleans (CIPs).
o Operating automated dry-hopping procedure.
o Separation of green beer using a centrifuge
o Filtration of beer using a sheet filter
o Monitoring fermentation, ensuring Fermentation profiles are adhered to.
o Performing basic quality checks. Phys-Chem checks, yeast counts & yeast viability.
